Serves 8
Ingredients:
2 cups grated Gruyere cheese
1/2 stick of butter (cut into small cubes)
1/2 t. saltDo not over cook
Dash of white pepper
1 1/2 t. dry mustard
1 cup heavy cream
12 eggs beaten
Bread crumbs - made from any old bread or rolls
Olive oil - small amount
Tomato sliced into 1/4" slices (8 slices)
Parsley (as a garnish)
7 X 11 baking dish
Directions:
Preheat oven to 350°.
Spread the cheese evenly over the bottom of dish. Distribute the butter over the cheese. Mix the seasoning and cream and drizzle ½ of this mixture over the cheese. Pour the eggs into the baking dish and then drizzle the remaining cream/seasoning mixture into the dish. Bake until a knife comes-out clean (approximately 45 minutes). Do not over cook. Protect the top from over-browning by placing foil on top.
Add a small amount of olive oil to your bread crumbs (just to moisten). Add one tablespoon of bread crumbs to each tomato slice. Place slices onto a sprayed baking sheet and broil until toasted. Top each portion with a tomato slice. Garnish with parsley.
